Honeydew Raw Honey is the only honey that is not made from flower nectar. It remains in liquid form for a long time, but can crystallise, giving it typically a very viscous, stringy quality.
Much less sweet and cloying than nectar honeys, sometimes slightly salty, with a touch of malt, suitable for cooked vegetables and prunes.

Organoleptic features: It remains liquid for a long time, but it can crystallise. It is dry, sticky, stringy, dark amber to almost black when it is liquid, and it assumes a brown colour when crystallised. Odour and flavour are of medium intensity, and long lasting, characterised by sour and salty notes.
This honey is produced by bees not directly from the nectar of flowers but from the sugar sap of the plants extracted from specific aphids. Black or dark brown and moderately sweet taste. Rich in mineral salts and therefore widely used by sportsmen and women. It is not very suitable for sweetening but great to spread on black bread and perfect to accompany cheese and cooked meats.
