Raw Chestnut Honey is among the most famous Italian honeys. Its colour is very dark, and it has a strong and typically bitter flavour. Organoleptic features: chestnut honey tends to remain liquid, because of the strong component of fructose. The eventual crystallisation is very slow, and not always regular. The colour is dark amber with a reddish-greenish hue in the liquid honey; if crystallised, it assumes a brown colour. The aroma is intense; it is not very sweet, but rather bitter and very persistent.
