Raw Chestnut Honey is among the most famous Italian honeys. Its colour is very dark, and it has a strong and typically bitter flavour. Its unique taste makes it suitable for cakes with dried fruit, or glazed vegetables. Excellent paired with red eat dishes, especially roast pork or grilled meats. It is also very good with saltwater fish such as mackerel and some freshwater fish, includin salmon and trout.

Organoleptic features: chestnut honey tends to remain liquid, because of the strong component of fructose. The eventual crystallisation is very slow, and not always regular. The colour is dark amber with a reddish-greenish hue in the liquid honey; if crystallised, it assumes a brown colour. The aroma is intense; it is not very sweet, but rather bitter and very persistent.
