Organoleptic features: This type of wildflower is reminiscent of chestnut and comes in liquid form. It usually has a strong flavour with a more or less bitter aftertaste. It maintains a creamy texture and crystallises more slowly. Our area offers many varieties of wild mint, wild thyme, brassicas and pasture grasses such as clover, alfalfa and dandelion. It has an amber colour tending to clear. This honey is often used in cooking, for breakfast and for the preparation of sweets.
